The successful candidate will be an engaged thought leader and people leader to deepen understanding and development of our ingredient to be used in novel food products. The successful candidate will serve as the resident technical expert on ingredient science and when needed will establish collaborations with external partners. The candidate will possess deep knowledge of characterization of ingredients and performance of functional ingredients across a handful of food categories. The successful candidate will be instrumental in coordinating cross-functional collaboration with product development, R&D, pilot plant, production, quality, and regulatory. Previous track-record of successfully developing new ingredients essential and experience with developing new food products is desirable. The applicant will be an accomplished scientist with technical and business acumen to drive research projects from ideation-to-finish line and set strategic direction for ingredient development.
This position will be in Chicago, Illinois at our 2075 W 43rd St location.

Professional Qualifications:

  • 12+ years of experience in research & development/product or process development of new products
  • Experience with development and commercialization of food ingredients
  • Possess strong technical skills and understand ingredient functionality, process interaction in various food matrices
  • Track record of building and leading productive technical teams
  • Member of R&D leadership team setting priorities and directions for organization
  • Be able to drive product development with a focus on the ambiguous front-end of innovation
  • Use novel fungi nutritional protein ingredients in a variety of applications to create food products
  • Attention to detail and the ability to communicate complex results in a clear manner
  • Direct bench top work and pilot plant trials to explore ingredient functionality at the molecular level as well as the macro level and optimize processes

Personal Qualifications:

  • Preferred Ph.D. or Master of Science in Analytical Chemistry, Protein Chemistry, Food Science, Food or Chemical Engineering, or related experience in the ingredient or food industry
  • Excellent communication skills, both written and verbal
  • Strong people management skills
  • Strong interpersonal, influencing, and project management skills
  • Comfortable working in a start-up environment
  • Demonstrated ability to prioritize and manage complexity
  • Ability to work effectively in a team environment and set technical and strategic direction
  • Self-motivated by problem solving in highly ambiguous situations
